  • 2 lbs ground chicken
  • 1 –2 tbsp oil or melted butter
  • 1 –2 tbsp cold water
  • Seasoning
  • –2 tsp applewood smoked salt
  • ½ –1 tsp liquid smoke
  • 1 tbsp brown sugar
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp sage
  • ½ tsp thyme
  • ½ tsp paprika

  • Mixing bowl
  • Skillet or frying pan
  • Measuring spoons
  • Drinking glass (for pressing patties)
  • Plastic wrap (to prevent sticking)
  • Spatula

Method
 

  1. Instructions
  2. In a large bowl, combine all ingredients.
  3. Mix until the meat becomes slightly sticky and well combined.
  4. Cook a small test patty in a skillet over medium heat. Taste and adjust seasoning as needed.
  5. Scoop using a #24 scoop for even portions.
  6. Press into patties using plastic wrap and a glass.
  7. Cook over medium heat until browned and fully cooked.
