Ingredients
  

Cajun Stew Beef (Base – Freezer Prep)
  • 2 lbs beef stew meat or beef chunks
  • teaspoons Cajun seasoning don’t be shy
  • teaspoons black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon oil
For the Crockpot Stew
  • 3 –4 tablespoons prepared roux or 3–4 frozen roux cubes
  • cups beef broth not more—trust this
  • cups chopped onion
  • 1 cup chopped bell pepper
  • ½ cup chopped celery
  • 1 teaspoon Cajun seasoning layering flavor
  • ½ teaspoon garlic powder
  • tsp splash paprika

Method
 

Instructions
    Step 1: Prep the Cajun Stew Beef
    1. Add beef to a bowl or freezer bag
    2. Add Cajun seasoning, black pepper, garlic powder, and oil
    3. Toss until fully coated
    4. Transfer to freezer bag, flatten, and freeze
    5. Label and store until ready
    Step 2: Build the Crockpot Base
    1. Add roux, broth, onion, bell pepper, and celery to the crockpot
    2. Stir lightly to start dissolving the roux
    Step 3: Add the Beef + Seasoning Layers
    1. Add frozen Cajun stew beef directly to the pot
    2. Add Cajun seasoning, garlic powder, paprika, and Worcestershire
    Step 4: Slow Cook
    1. Cook on LOW for 6–8 hours
    2. OR HIGH for 3–4 hours
    3. Stir halfway through if you can
    Step 5: Finish the Gravy
    1. Check thickness—the gravy should be rich and coat a spoon
    2. If needed, cook uncovered 20–30 minutes to reduce
    Step 6: Serve
    1. Serve hot over white rice
