Honey Wheat Sandwich Bread

  • 2 ¼ cups bread flour 280g
  • 1 cup whole wheat flour 140g
  • 1 cup + 3 tbsp whole milk 275g
  • 2 tbsp butter softened
  • 2 tbsp honey
  • 1 tsp salt
  • 2 tsp yeast

Method
 

Instructions
    Mix the Dough
    1. In a large bowl, combine bread flour, whole wheat flour, yeast, and salt.
    Add Wet Ingredients
    1. Add milk, honey, and butter. Mix until a dough forms.
    Knead
    1. Knead for 8–10 minutes until smooth and slightly tacky.
    2. If the dough feels stiff, add 1 tbsp milk at a time.
    First Rise
    1. Place in a greased bowl, cover, and let rise until doubled (about 1–1.5 hours).
    Shape
    1. Shape into a loaf and place into a greased loaf pan.
    Second Rise
    1. Let rise again until the dough crests slightly above the pan.
    2. Optional Topping
    3. Brush with milk and sprinkle with oats or seeds.
    Bake
    1. Bake at 350°F (175°C) for 35–40 minutes.
    2. Tent with foil halfway if browning too quickly.
    Cool
    1. Let cool before slicing for best texture.
