Mix the Dough
- In a large bowl, combine bread flour, whole wheat flour, yeast, and salt.
Add Wet Ingredients
- Add milk, honey, and butter. Mix until a dough forms.
Knead
- Knead for 8–10 minutes until smooth and slightly tacky.
- If the dough feels stiff, add 1 tbsp milk at a time.
First Rise
- Place in a greased bowl, cover, and let rise until doubled (about 1–1.5 hours).
Shape
- Shape into a loaf and place into a greased loaf pan.
Second Rise
- Let rise again until the dough crests slightly above the pan.
- Optional Topping
- Brush with milk and sprinkle with oats or seeds.
Bake
- Bake at 350°F (175°C) for 35–40 minutes.
- Tent with foil halfway if browning too quickly.
Cool
- Let cool before slicing for best texture.
