Sausage Base
  • 1 lb ground chicken
  • ½ lb ground pork
  • 1 –2 tbsp cold water
Seasoning
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tbsp maple syrup
  • 1 tsp smoked paprika
  • ½ tsp sage
  • ½ tsp thyme
  • 1 tsp garlic powder
  • 1/8 tsp maple extract
  • ½ tsp red pepper flakes optional

Method
 

Instructions
  1. Combine all ingredients in a bowl.
  2. Mix until slightly sticky.
  3. Cook a small test patty and adjust seasoning if needed.
  4. Scoop using a #24 scoop.
  5. Press into patties using plastic wrap and a glass.
  6. Cook until browned and fully cooked.
