Dough
  • 270 g 2¼ cups all-purpose flour
  • 1 Tbsp sugar
  • 1 tsp salt
  • tsp 1 packet instant yeast (rapid rise)
  • 2 Tbsp butter softened
  • ¾ cup 180 g warm milk (105–115°F)
  • 1 Tbsp olive oil for brushing the pan
Garlic Butter Topping
  • 4 Tbsp unsalted butter melted
  • 2 cloves garlic minced or roasted
  • 1 tsp parsley fresh or dried
  • ½ tsp Italian seasoning
  • Pinch of salt
Cheese
  • 1 cup shredded mozzarella
  • ¼ cup Parmesan or Asiago

Method
 

Make the Dough (10 minutes)
  1. In a large bowl or mixer, combine flour, sugar, salt, and yeast.
  2. Add warm milk and butter; mix until a soft dough forms.
  3. Knead for 5–6 minutes (stand mixer or by hand) until smooth and slightly tacky.
  4. Cover with a damp towel and let rest 15–20 minutes in a warm spot — it’ll puff slightly.
  5. (You’re not looking for a full double rise here, just enough air to make it tender.)
Shape (10 minutes)
  1. Oil a 9×13” pan or line with parchment.
  2. Roll or press dough to fit the pan evenly.
  3. Dimple with fingertips (like mini-focaccia).
  4. Brush half the garlic butter over the surface.
  5. 3️⃣ Add Cheese
  6. Sprinkle mozzarella and Parmesan evenly over the top.
  7. Optional: Add a little extra butter drizzle for color.
Quick Rise (40 minutes)
  1. Place the pan in a warm oven (around 90–100°F) with the door cracked, or cover and set near your stove.
  2. → Dough should look slightly puffy but not doubled.
Bake
  1. Bake at 400°F (200°C) for 16–20 minutes until edges are golden and cheese is melted and bubbly.
  2. → For a light crunch, place on the lower oven rack for the last 3 minutes.
